Welcome back for a new very simple recipe.

When fall starts I am always looking forward to buying the first pumpkins to make one of my favorite soups. It is super easy to make, goes very fast and I just  need a handful of ingredients, so I don’t have to do much shopping.

But I just can cook it if my two girls are not at home, one isn’t very fond of pumpkins and the other one doesn’t like creamy soups in general, the consistency reminds her to much of Baby Food.

Tough luck here, but I still sometimes cook it, either they’ll eat it or they have to prep something for themselves, both of them are old enough now ;)

For my recipe I tend to use a Hokaido Pumpkin, because I don’t have to peel it, you can eat the skin, he just needs about 5 min to become tender and let’s be honest, he is delicious ;)

Anleitungen
  1. All ingredients without the liquids:

  2. At first I peel the onions and cut them into cubes. Then I wash the pumpkin, cut it in half, remove the seeds with a spoon and cut it into pieces. I also peel the potatoes and cut them into small bits. Then I take the ginger, cut it into slices first, then into strips and at last into cubes.

  3. I pour the sunflower oil into the soup pot, heat it up and give the diced onions and the ginger in when it's hot.

  4. Fry them, till they are beginning to turn brown ( because of the flavor) and
  5. add the vegetables (pumpkin and potatoes).

  6. Pour 2 liters of water into the pot, add salt und chicken powder and bring to the boil. Let the soup simmer slowly for 20 minutes.
  7. I pour the soup through a sieve. This way I can mash the vegetables without making a big mess.

  8. Then puree the vegetables with the blender to a paste.
  9. Give some liquid ( soup ) to the mashed vegetables until it has the desired consistency.
  10. Now taste it and add some salt and pepper if needed, before garnishing it with sour cream , watercress or parsley leaves.
