You don’t need any fancy seasoning, just some raw onion, cut into fine slices, to give this soup a bit of an extra kick, which I loved as a kid. (Now I am just eating the onion with the soup, when I don’t have any meetings in the afternoon ;) )
As kids we were used to eat raw onion with everything, sandwiches, salads, soups, even stews. If you are not so fond of it, you could try some chives. Also if you like your soup to taste a bit more asian, replace the parsley leaves with coriander.
And if you like it really spice, why not add some chilli? My husband and oldest daughter are always doing that, I prefer the mild, non-spicy version ;).
So here we go and tell me if you liked the recipe or if you are having any suggestions =)
Simple Potato Soup
You need just some basic ingredients to cook this fast and yummy potato soup.
Then cut the carrots, the parsley into slices. The potatoes into quarters and cut into pieces. Chop parsley leaves.
Heat the sunflower oil in a stockpot and give the carrots slices into. Let them fry a little, before you added the parsley slices, the onion, the potatos, the 2 liters of water and the salt. Bring everything to a boil and let the soup cook 15 minutes.
In the meantime stir the flour with 0,2 liter cold water, until there are no lumps. This is achieved by always giving just a little water to the flour. Then, a little more until you have added all.
After the soup has boiled for 15 minutes you can pour in the flour resolved. Then take the soup from the hearth. Add the choped parsley and if you like some chopped chives also.
